If you are looking for ways to profess your love to your significant other this Valentine’s Day, creating a romantic, delicious meal is like shooting Cupid’s arrow straight through his/her heart. And it does not have to be complicated. Keep it simple so you can get to the cuddling. Here is a very easy recipe made with lots of love.
Of course you will need extra-virgin olive oil, about 2 tablespoons. Also, 1 tablespoon of butter along with some minced garlic. I like to use the minced garlic that comes in a jar so you can measure out 1 teaspoonful. If you really want to add more flavor, you can also include 1-2 minced shallots. Get all of that into a large skillet over medium heat and let it sauté for about 3-5 minutes. Gradually pour in 1 cup of vodka and let that reduce by half. Should take about 3 minutes. Once that is ready, add 1 cup of low sodium chicken stock and pour in a 32 ounce can of fire roasted tomatoes. Season to taste with salt and pepper.
While the sauce simmers, cook your pasta in some salted boiling water with a tablespoon of olive oil until al dente. As the pasta is cooking, pour in ½ cup of heavy cream into the sauce. If you are still sticking to your New Year’s Resolution, you can use half-and-half or even skim milk. Once the sauce starts to come to a bubble, remove it from the heat to let it thicken a bit. Drain your pasta and plate. Pour the vodka cream sauce over the pasta and garnish with some fresh basil leaves.
